From Harvest to Pack: How Pistachio Quality Is Protected
In our Bozova orchards, quality is not decided on harvest day — it is the outcome of a year that begins with soil analysis. Here is the journey from harvest to pack.

When pistachio quality is discussed, the harvest comes to mind first. Yet on our 5,000 decares in and around Bozova, quality starts being decided months before harvest, at the soil-analysis table. In this article we share the journey of a pistachio from branch to pack, and what we watch for at every stage.
Quality Begins Before the Harvest
The season opens with soil and leaf analysis. What each parcel needs is determined by analysis, and the fertilisation and irrigation calendar is built accordingly. Through drip irrigation and soil-moisture monitoring, each tree receives exactly as much water as it needs — no more, no less. For pest management we apply integrated control: pheromone traps and regular observation track the pest threshold, with intervention only when necessary and always controlled.
Annual pruning plans not only this season of the tree but the seasons to come. Across an orchard of 100,000 trees, each of these decisions is written into the product's quality a year later.
Harvest: A Matter of Timing
In the window between mid-September and early October, ripeness is monitored parcel by parcel. Produce shaken from the tree is not left waiting; it enters processing the same day. Every hour of delay means the risk of shell staining and quality loss.
Processing: Five Separate Disciplines
We do not compress post-harvest handling into a single word:
- Washing — Removing the outer hull and field residue.
- Drying — Sun and machine-assisted drying that brings moisture to the right level.
- Hulling — Separating the shell without damaging the kernel for kernel production.
- Optical grading — Sorting by size and quality, defining premium and standard kernel grades.
- Packing — Wholesale and export packaging, with vacuum packing where shelf life requires it.
Managing Expectations in Export and Wholesale
Working with wholesale buyers and the food industry, the process begins with samples. The buyer's quality expectations, volume and delivery period are put in writing, and the shipment is prepared within that frame. Kernels for the pastry and chocolate industries demand separate care: integrity, colour and aroma profile are evaluated together.
